Initially used due to its bacteriostatic and preservative properties, it gained popularity among brewers due to its bitter taste. That is exactly why hops replaced the "gruit", an ancient herbal mixture that was initially used to add bitterness and flavor to beers.

In some styles, hops need to be discreet, with low bitterness and mild aromas. For others, it is the main protagonist: bitter, resinous and citric, just like IPAs.
